A somewhat mysterious single malt here, independently bottled by Signatory for the Un-Chillfiltered Collection. This one was distilled by an Orkney-based distillery back in 2009 and left to age in a pair of hogsheads for a dozen years, before being bottled up at 46% ABV. We say “somewhat mysterious” as yes, we don’t know which Orkney distillery it came from, there aren’t all that many distilleries in Orkney, so you can probably give it a pretty good guess.

Nose: Lemon drops, salted caramel, shortbread, and earthy oak.

Palate: Malty and fragrant, with a subtle coastal salinity sneaking through.

Finish: Waxy orange and toasted malt.

Distillery Information

Signatory was founded in 1988 by Andrew and Brian Symington and is best known for their Signatory Vintage Scotch Whisky independent bottlings including their Cask Strength and Un-Chill Filtered collections. With an initial plan to have all their bottles signed by the great and the good long since abandoned (the plan that gave the company its name), Signatory is now one of the largest independent whisky bottlers and even purchased Edradour distillery from Pernod Ricard in 2002 to boot.
