This Italian gin is named after a naval doctor from the 1800s. Gil came across the antidote against the venom of the viper, which also happened to make a very tasty gin. In this version of his creation, juniper is accompanied by Italian lemon, grapefruit, bitter and sweet orange, alongside wormwood, elderflower, lavender, aloe, and oregano. Whew! Just a few botanicals then. Each ingredient is infused in spirit separately before it’s allowed to marry together in the bottle for 40 days. A top Mediterranean gin!

Nose: Complex on the nose, it gradually reveals citrus aromas but also floral and herbaceous notes.

Palate: To the taste it is fresh, savory and decisive, with notes of mint and aromatic herbs that accompany its long persistence.

Finish: Quite delicate and smooth texture on the long finish.

Distillery Information

That night it was raining, the sea was stormy. It was me, Gil , Roger and the great Jefferson , our captain . The ship seemed to abandon us at the mercy of the waves, we talked about our adventures, we couldn’t wait to get to Italy, that fantastic country, to relax and set off again for the great continent. A crazy wave or maybe a sea dragon, I don’t know if it exists, struck a deadly blow and my friends and I found ourselves on deck. We couldn’t resist that dragon which was fatal, we thought we couldn’t. What saved us was that old trunk we had on the ship. After a night at sea, Jefferson understood, I don’t know how, that we were close to land. Gil prayed, I don’t know what he said in his desperation… Of course the will to live was great. The last strength seemed to abandon us when suddenly I touched the bottom with my feet, Roger shouted: “We are safe!”. Exhausted we lay down on that enchanting beach. I don’t know how many hours, perhaps a day, passed before we woke up. We found ourselves in a paradise, Jefferson warned that it would be his eternal place, he immediately said: “I will stay here forever” . Walk walk, as in fairy tales, we walked along citrus groves and botanical paths full of aromatic herbs. There we saw an Old Customs Warehousewhere we found a family who welcomed us. Giocondo, the owner, took us to work in his warehouse, he was a seller of spices and some smuggled spirits. That warehouse Jefferson called it, I can never forget it, “The Perfumery” . Years went by, I don’t know how many, we fell in love with that territory that filled us with surprises every day, without ever losing our passion for drinking well. Each of us had the raw material and the knowledge to create our own liqueur. I never succeeded, but they did.
