From Chelo Distillery in Haiti, it’s the 2020 vintage of Clarin Sajous. An unaged agricole style rum double distilled from pure sugar cane. This rum has been bottled at a punchy 55.2% and is full of the fruity funk that fans of this rum style will love.

Clairin Sajous 2020 | 700ML Tasting Notes

Nose: Rich, heady. Very finely liquoriced, the first nose is also freshly herbaceous and fruity (lemon). When aired, strong spices (nutmeg) rub shoulders with more medicinal notes (musk, sinapism). Gradually, sugarcane and cane sugar rise to the surface of the aromatic palette.

Palate: Both lively and fresh. Exotic (pineapple, banana], the attack in the mouth is in turn marked by notes of green liquorice. The midpalate is subtly fruity and candied (grapefruit, lime). The finish is tenderly spicy (cinnamon, ginger).

Finish: Long, precise. Evocative, the beginning of the finish literally transports us to the time of the sugarcane harvest. At the same time, succulent vanilla and chocolate flavours bring a lot of sweetness and flesh to the texture of the taste palette. The finish is fibrous [sugarcane) and aromatic verbena, thyme). The empty glass reveals notes of puffed rice and custard.

Distillery Information

The Douglas Casimir Distillery was founded by Duncan Casimir in 1979 in Barradres, south-west Haiti, and is today directed by his son Faubert. The distillery uses Hawaii White and Hawaii Red cane. Unusually, lemon grass, cinnamon and sometimes ginger are added to the must before distillation in a pot still. Faubert Casimir is one of the producers selected by Luca Gargano and Daniele Biondi during a trip to Haiti in 2012 that helped introduce Clairins to a wider public.
