It’s the 2018 vintage of Clairin Sajous cane juice rum, hailing from Haiti’s Chelo distillery. The folks at the distillery don’t waste a thing, fuelling the fires which reduce the sugar cane juice with the remains of the sugar cane itself! It’s then been fermented, double distilled, and bottled at a burly 56.4% ABV, bursting full of fresh tropical notes.

Nose: Tangy, zesty papaya and citrus, with a hint of fresh blossom wafting in, lending a floral, grassy fragrance to it.

Palate: Some tropical fruit juice sharpness, alongside herbaceous hints of lemongrass and caraway

Finish: A touch of savoury, salty air appears

Distillery Information

Clairin Sajous Rum is a Haitian agricole rum double distilled at the Chelo distillery in the village of St Michel de l’Attalaye. A pure, fruity and herbaceous white rum. In the remote villages of Haiti, primitive micro-distilleries craft a spirit known as clairin from sugar cane juice for local consumption. Naturally fermented using only airborne wild yeast and bottled at distillation strength, this spirit is throwback to the days prior to modern distilleries, and reminiscent of raw rhum agricole. Italian independent bottler Velier purchased batches of clairin from a small number of distilleries, but unfortunately its not currently imported to the U.S.
