Holyrood Distillery has a habit of using different distillation techniques to highlight the variety of flavours you can create. For Bright Gin, a process called multi-shot was used which concentrates the botanical flavour to create a vibrant, or you might say bright, gin.

Distillery Information

The Holyrood Distillery in Edinburgh was founded in 2019 by David Robertson, former master distiller at The Macallan, and Rob Carpenter, a Canadian lawyer, and founder of the Canadian branch of the Scotch Malt Whisky Society. It was the first single malt distillery in Edinburgh since 1925. As is customary for new ventures, Holyrood produces a range of unaged spirits including gin as well as doing contract distilling while we patiently wait for the release of its first single malt whisky.
