Lamata De Castilla is a mezcal distilled from blue agave. It is made by the family of the Cruz in Jalisco, Mexico. This is a blue agave spirit that has been distilled in copper pot stills. The family claims to have made it since 1836. It is then bottled by hand in a cask that is soaked in a salt solution. The company states that this gives the spirit its blue color. It is then left to age for two years.
